Orange Chicken

INGREDIENTS Chicken: 4 Boneless Skinless Chicken Breasts cut into bite-size pieces 3 Eggs whisked 1/3 cup Cornstarch 1/3 cup Flour Salt Oil for frying Orange Chicken Sauce: 1 cup Orange Juice 1/2 cup Sugar 2 Tablespoons Rice Vinegar or White Vinegar 2 Tablespoons Soy Sauce use tamari for a gluten-free dish 1/4 teaspoon Ginger 1/4 teaspoon Garlic Powder or 2 garlic cloves, finely diced 1/2 teaspoon Red Chili Flakes Orange Zest from 1 orange 1 Tablespoon Cornstarch Garnish : Green Onions Orange Zest INSTRUCTIONS To make orange sauce: In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic, and red chili flakes. Heat for 3 minutes. In a small bowl, whisk 1 Tablespoon of cornstarch with 2 Tablespoons of water to form a paste. Add to orange sauce and whisk together. Yellow Squash Soup

  INGREDIENTS 10 yellow squash 5 cups water 1/4 cup nutritional yeast 2 tsp salt 1/2 tsp pepper 2 tsp onion powder 2 tsp garlic powder INSTRUCTIONS Set water to boil.  Peel and slice squash. Add squash and all seasonings to boiling water. Simmer 30 minutes. Blend in a blender. Serve with bread.

Egg Roll in a Bowl

INGREDIENTS 1 lb ground beef or pork 1 teaspoon minced garlic shredded cabbage shredded carrot 1/4 cup low-sodium soy sauce 1 teaspoon ground ginger 2 teaspoons sriracha 1 whole egg 1 tablespoon sesame oil 2 tablespoons sliced green onions INSTRUCTIONS In a large skillet, brown the pork or beef until no longer pink. Add the garlic and sautee for 30 seconds. Add the cabbage, carrot, soy sauce, ginger, and saute until desired tenderness. You can add a little water if you need more liquid to saute the coleslaw down. Make a well in the center of the skillet and add the egg. Scramble until done over low heat. Stir in sriracha. Drizzle with sesame oil and sprinkle with green onions. Add additional soy sauce and sriracha if desired. Balsamic-Honey Roasted Beets

Ingredients 3 red beets 3 golden beets 4 large carrots 1 Tbsp olive oil 1/2 tsp salt 1 Tbsp butter, melted 2 Tbsp honey 1 Tbsp balsamic vinegar 1 Tbsp fresh thyme or ½ Tbsp dried thyme Directions Preheat the oven to 450°. Wash and peel the beets and carrots, and cut into half-inch pieces. Place in a bowl, drizzle with olive oil and sprinkle with salt, then toss to coat. Spread the veggies out on a large sheet pan and roast 20-25 minutes or until they are tender. Air Fryers also work great! In a small bowl, combine the melted butter, honey, and balsamic vinegar. Remove the pan from the oven and pour the honey butter mixture over the veggies. Stir until well-coated. Return to the oven for 5 minutes. Spoon into a serving bowl and top with fresh thyme. Mango Salsa

Ingredients 3 ripe mangos, diced (how to cut a mango) Avocados diced (optional) 1 medium red bell pepper, chopped ½ cup chopped red onion ¼ cup packed fresh cilantro leaves, chopped 1 jalapeño, seeded and minced 1 large lime, juiced (about ¼ cup lime juice) ⅛ to ¼ teaspoon salt, to taste Directions In a serving bowl, combine the diced mango, avocado, bell pepper, onion, cilantro, and jalapeño. Drizzle with the juice of one lime. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For the best flavor, let the salsa rest for 10 minutes or longer.
